Today's gif: Cao Lau noodles with shredded chicken!
The dish is found only in the town of Hoi An, the reason for so is that the noodles are made from an ancient Cham well, just outside the town. The rice noodles, known for their springy and bubbly texture, bounces in your mouth as you chew on it.
Topped with greens, fried scallions, sliced chicken and fishcake, the restaurant I went in Hoi an serves a modern take of the dish, but it doesn’t matter to me as long as essence of the dish, the bouncy noodles, is still the star of the show. You can also take home dried versions of the noodles, they are kind of pricy tho.
